Under Bermuda's Public Health (Fats, Oils and Grease Removal) Regulations 2017 (BR 5/2017), every commercial and institutional food preparation business in Bermuda is legally required to install, operate, and maintain an approved grease trap or interceptor — and to clean it regularly.
The Department of Health Standard: You must clean your interceptor before Fats, Oils, and Grease (FOG) and solids reach 25% of the interceptor's liquid depth. Frequency is volume-based: high-volume kitchens (such as busy restaurants or resort hotels) will hit this threshold monthly, while lower-volume operations (small cafes, light prep kitchens) might require quarterly cleaning. Every clean must be documented, scheduled, and completed by a competent provider.
